What you need

Method

  1. 1Oven to 200C. Press the tofu properly, slice into thick slabs, oil and salt both sides.
  2. 2Bake 25 minutes, turning once, until the edges are firm and golden.
  3. 3Meanwhile soften the onion and carrot, add the curry paste for a minute, then coconut milk and a mug of water.
  4. 4Simmer 12 minutes and blitz smooth. A spoon of maple to balance the heat.
  5. 5Rice, tofu slabs, sauce over.
