What you need
- ·300g firm tofu
- ·100g basmati rice
- ·100g carrots
- ·100g onions
- ·30g curry paste
- ·120g coconut milk
- ·12g olive oil
- ·8g maple syrup
Method
- 1Oven to 200C. Press the tofu properly, slice into thick slabs, oil and salt both sides.
- 2Bake 25 minutes, turning once, until the edges are firm and golden.
- 3Meanwhile soften the onion and carrot, add the curry paste for a minute, then coconut milk and a mug of water.
- 4Simmer 12 minutes and blitz smooth. A spoon of maple to balance the heat.
- 5Rice, tofu slabs, sauce over.
