What you need

Method

  1. 1Eggs boiled 8 minutes, cooled under the tap, peeled and quartered.
  2. 2Onion softened in the oil for 8 minutes, then curry paste in for a minute until it smells like something.
  3. 3Rice in, coated, then twice its volume of water. Lid on, 12 minutes, off the heat for 5 more.
  4. 4Mackerel folded in with a fork in big pieces, peas through the residual heat.
  5. 5Eggs on top, all the lemon over. Kedgeree without lemon is stodge.
