What you need
- ·250g mackerel fillets in tomato
- ·90g basmati rice
- ·2 free range eggss
- ·100g onions
- ·25g curry paste
- ·120g frozen peas
- ·1 lemons
- ·10g olive oil
Method
- 1Eggs boiled 8 minutes, cooled under the tap, peeled and quartered.
- 2Onion softened in the oil for 8 minutes, then curry paste in for a minute until it smells like something.
- 3Rice in, coated, then twice its volume of water. Lid on, 12 minutes, off the heat for 5 more.
- 4Mackerel folded in with a fork in big pieces, peas through the residual heat.
- 5Eggs on top, all the lemon over. Kedgeree without lemon is stodge.
