What you need
- ·250g chickpeas
- ·80g basmati rice
- ·80g coconut yoghurt
- ·15g curry paste
- ·1 apples
- ·60g baby spinach
- ·12g mixed seeds
- ·1 lemons
Method
- 1Rice on, then cooled — this is a cold bowl and warm rice makes the dressing split.
- 2Fry the curry paste in a dry pan for 45 seconds before it goes anywhere near the yoghurt. Raw paste tastes of raw paste.
- 3Let it cool, then stir it into the coconut yoghurt with the lemon juice.
- 4Fold in the drained chickpeas and coarsely grated apple, crushing a few chickpeas so the dressing has something to hold.
- 5Over rice and spinach, seeds on top.
