What you need

Method

  1. 1Rice on, then cooled — this is a cold bowl and warm rice makes the dressing split.
  2. 2Fry the curry paste in a dry pan for 45 seconds before it goes anywhere near the yoghurt. Raw paste tastes of raw paste.
  3. 3Let it cool, then stir it into the coconut yoghurt with the lemon juice.
  4. 4Fold in the drained chickpeas and coarsely grated apple, crushing a few chickpeas so the dressing has something to hold.
  5. 5Over rice and spinach, seeds on top.
