What you need
- ·200g cottage cheese
- ·150g chickpeas
- ·80g baby spinach
- ·120g cherry tomatoes
- ·10g mixed seeds
- ·8g olive oil
Method
- 1Crisp the drained chickpeas in the oil for 6 minutes, pressing some flat so they split and brown.
- 2Spinach into the hot pan for 20 seconds, just to collapse it.
- 3Cottage cheese spooned onto the plate and spread with the back of the spoon, everything else piled on top while warm.
- 4Seeds and a lot of black pepper.
