What you need

  1. 1Mince into a dry hot pan and left alone until one side is properly browned before you break it up. Stirring it from the start steams it grey.
  2. 2Onion and garlic in with the fat that has rendered out, then the spices and chilli.
  3. 3Tomatoes, beans and stock. Simmer 20 minutes uncovered until it thickens.
  4. 4Rice on when the tomatoes go in.
  5. 5Taste for salt and heat at the end, not the start.
