What you need
- ·100g red lentils
- ·80g beef mince (5% fat)
- ·75g basmati rice
- ·200g chopped tomatoes
- ·80g onions
- ·80g frozen peas
- ·8g garlic
- ·8g ground spices (cumin, paprika, turmeric)
- ·5g stock cubes
- ·8g olive oil
Method
- 1Brown the mince hard in a dry pan first and leave it alone — colour is most of the flavour here, and 80g of beef is doing the work of 250g.
- 2Onion into the fat with a pinch of salt, 6 minutes, then garlic and spices for one.
- 3Lentils, tomatoes, stock and 350ml water. Simmer 20 minutes.
- 4Peas in for the last three. Rice on when the lentils go in.
