What you need
- ·110g red lentils
- ·70g basmati rice
- ·200g chopped tomatoes
- ·70g onions
- ·8g garlic
- ·8g root ginger
- ·8g ground spices (cumin, paprika, turmeric)
- ·5g stock cubes
- ·10g olive oil
Method
- 1Onion into the oil until genuinely soft — 8 minutes. Rushing this is why dhal tastes flat.
- 2Garlic, ginger and spices in for a minute, until the pan smells of it.
- 3Lentils, tomatoes, stock and 400ml water. Simmer 20 minutes, stirring occasionally so the bottom does not catch.
- 4Rice on when the lentils go in — they finish together.
- 5Beat it hard with the spoon at the end. That is what turns it from lentils in liquid into dhal.
