What you need

Method

  1. 1Onion into the oil until genuinely soft — 8 minutes. Rushing this is why dhal tastes flat.
  2. 2Garlic, ginger and spices in for a minute, until the pan smells of it.
  3. 3Lentils, tomatoes, stock and 400ml water. Simmer 20 minutes, stirring occasionally so the bottom does not catch.
  4. 4Rice on when the lentils go in — they finish together.
  5. 5Beat it hard with the spoon at the end. That is what turns it from lentils in liquid into dhal.
