What you need

Method

  1. 1Onion properly soft first — eight minutes. Every flat dhal is a rushed onion.
  2. 2Garlic, ginger and spices for a minute, then the lentils, tomatoes, stock and 400ml water.
  3. 3Twenty minutes at a low simmer, stirred now and then so the bottom does not catch.
  4. 4Peas and spinach in for three minutes, then beat it hard with the spoon — that is what makes it dhal rather than lentils in liquid.
  5. 5Off the heat, pea protein whisked in a bit at a time, then the lemon.
