What you need
- ·95g red lentils
- ·250g chopped tomatoes
- ·170g frozen peas
- ·150g baby spinach
- ·30g pea protein powder
- ·70g onions
- ·10g garlic
- ·8g root ginger
- ·9g ground spices (cumin, paprika, turmeric)
- ·5g stock cubes
- ·0.5 lemonss
- ·6g olive oil
Method
- 1Onion properly soft first — eight minutes. Every flat dhal is a rushed onion.
- 2Garlic, ginger and spices for a minute, then the lentils, tomatoes, stock and 400ml water.
- 3Twenty minutes at a low simmer, stirred now and then so the bottom does not catch.
- 4Peas and spinach in for three minutes, then beat it hard with the spoon — that is what makes it dhal rather than lentils in liquid.
- 5Off the heat, pea protein whisked in a bit at a time, then the lemon.
