What you need

Method

  1. 1Onion in the oil until soft, then garlic, ginger and spices for a minute — until the kitchen smells of cumin, not before.
  2. 2Lentils and 700ml stock, simmered 18 minutes until they have collapsed.
  3. 3Peas and spinach in for the last three, then blitzed or beaten smooth.
  4. 4OFF THE HEAT, and only then the pea protein, whisked in a ladleful at a time. Into a boiling pot it goes grainy and stays grainy.
  5. 5Lemon in at the end, and taste for salt — it will need more than you expect.
