What you need

Method

  1. 1Lentils on in twice their volume of water, 15 minutes, drained.
  2. 2Mushrooms into a dry pan — no oil yet — in one layer and left alone. They release water, the water boils off, and only then do they brown. Adding oil at the start is what makes mushrooms grey and squeaky.
  3. 3Oil, garlic and spices in once they have taken colour.
  4. 4Broccoli in for 4 minutes with a splash of water and a lid.
  5. 5Lentils and spinach folded through off the heat, all the lemon over.

Four hundred grams of mushrooms cooks down to about a third of that, and they carry more protein per calorie than the lentils do — 0.141 against 0.071. That is why this bowl works without any soy in it.
