What you need
- ·80g red lentils
- ·400g chestnut mushrooms
- ·200g broccoli
- ·100g baby spinach
- ·1 lemons
- ·10g garlic
- ·5g olive oil
- ·4g ground spices (cumin, paprika, turmeric)
Method
- 1Lentils on in twice their volume of water, 15 minutes, drained.
- 2Mushrooms into a dry pan — no oil yet — in one layer and left alone. They release water, the water boils off, and only then do they brown. Adding oil at the start is what makes mushrooms grey and squeaky.
- 3Oil, garlic and spices in once they have taken colour.
- 4Broccoli in for 4 minutes with a splash of water and a lid.
- 5Lentils and spinach folded through off the heat, all the lemon over.
Four hundred grams of mushrooms cooks down to about a third of that, and they carry more protein per calorie than the lentils do — 0.141 against 0.071. That is why this bowl works without any soy in it.
