What you need
- ·3 free range eggss
- ·90g red lentils
- ·70g basmati rice
- ·200g chopped tomatoes
- ·70g onions
- ·8g ground spices (cumin, paprika, turmeric)
- ·8g garlic
- ·8g olive oil
- ·5g stock cubes
Method
- 1Eggs into boiling water for 8 minutes, then cold water and peel.
- 2Onion, garlic and spices in the oil while they cook.
- 3Lentils, tomatoes, stock and 350ml water, 18 minutes until thick.
- 4Halve the eggs and sit them on top rather than stirring them in.
