What you need
- ·240g chicken thigh fillets
- ·90g basmati rice
- ·120g onions
- ·12g garlic
- ·8g ground spices (cumin, paprika, turmeric)
- ·8g stock cubes
- ·120g frozen peas
- ·10g olive oil
Method
- 1Thighs browned hard in the oil, both sides, in the pan you will cook everything in. Take them out.
- 2Onion and garlic into the chicken fat, 6 minutes, scraping up everything stuck to the base — that brown layer is the flavour of the whole pot.
- 3Rice and spices in, stirred until every grain is coated and shiny.
- 4Stock in, chicken back on top, lid on, lowest heat, 18 minutes. Do not lift the lid.
- 5Peas in, heat off, lid back on for 5 minutes.
