What you need

Method

  1. 1Thighs browned hard in the oil, both sides, in the pan you will cook everything in. Take them out.
  2. 2Onion and garlic into the chicken fat, 6 minutes, scraping up everything stuck to the base — that brown layer is the flavour of the whole pot.
  3. 3Rice and spices in, stirred until every grain is coated and shiny.
  4. 4Stock in, chicken back on top, lid on, lowest heat, 18 minutes. Do not lift the lid.
  5. 5Peas in, heat off, lid back on for 5 minutes.
