What you need

Method

  1. 1Mushrooms chopped to the size of mince and into a big dry pan in two batches. They must brown, and they will not brown crowded — this step is twelve minutes and it is the dish.
  2. 2Onion and garlic in the oil once the mushrooms are out.
  3. 3Lentils, passata, stock and 300ml of water in. Mushrooms back. Twenty minutes at a low simmer.
  4. 4Kale in for the last 5 minutes, spinach folded through at the very end.
  5. 5No pasta under it on purpose — it is a bowl of ragù, and it does not need one.
