What you need
- ·90g red lentils
- ·500g chestnut mushrooms
- ·150g curly kale
- ·150g baby spinach
- ·150g passata
- ·50g onions
- ·12g garlic
- ·6g stock cubes
- ·4g olive oil
Method
- 1Mushrooms chopped to the size of mince and into a big dry pan in two batches. They must brown, and they will not brown crowded — this step is twelve minutes and it is the dish.
- 2Onion and garlic in the oil once the mushrooms are out.
- 3Lentils, passata, stock and 300ml of water in. Mushrooms back. Twenty minutes at a low simmer.
- 4Kale in for the last 5 minutes, spinach folded through at the very end.
- 5No pasta under it on purpose — it is a bowl of ragù, and it does not need one.
