What you need
- ·120g red lentils
- ·350g white potatoes
- ·120g carrots
- ·250g passata
- ·100g frozen peas
- ·6g stock cubes
- ·80g onions
- ·12g olive oil
Method
- 1Potatoes on to boil, 20 minutes, then mash with half the oil and far more salt and pepper than feels right.
- 2Meanwhile soften the onion and carrot, then add lentils, passata, stock and herbs.
- 3Simmer 20 minutes until thick enough that a spoon leaves a trail. Peas in at the end.
- 4Lentils into a dish, mash spread over, then drag a fork across the top.
- 5Hot grill, 6-8 minutes, until the fork-peaks go dark. Those ridges are the best bit.
