What you need

Method

  1. 1Potatoes on to boil, 20 minutes, then mash with half the oil and far more salt and pepper than feels right.
  2. 2Meanwhile soften the onion and carrot, then add lentils, passata, stock and herbs.
  3. 3Simmer 20 minutes until thick enough that a spoon leaves a trail. Peas in at the end.
  4. 4Lentils into a dish, mash spread over, then drag a fork across the top.
  5. 5Hot grill, 6-8 minutes, until the fork-peaks go dark. Those ridges are the best bit.
