What you need
- ·180g cooked king prawns
- ·100g basmati rice
- ·2 free range eggss
- ·100g frozen peas
- ·80g sweetcorn
- ·20g soy sauce
- ·8g garlic
- ·12g olive oil
Method
- 1Use cold, day-old rice if you have it. Fresh rice steams and goes to paste — this is the whole secret of fried rice.
- 2Screaming hot pan, oil, garlic for 20 seconds only.
- 3Rice in and spread it out. Leave it 90 seconds so the bottom crisps before you toss it.
- 4Push aside, scramble the eggs in the space, then fold them through.
- 5Prawns, peas and sweetcorn in for the last 2 minutes — the prawns are already cooked and just need heating.
- 6Soy sauce around the edge of the pan, not the middle, so it sizzles rather than soaks.
