What you need
- ·200g beef mince (5% fat)
- ·100g basmati rice
- ·1 free range eggs
- ·80g carrots
- ·100g baby spinach
- ·20g soy sauce
- ·8g garlic
- ·6g red chillies
- ·10g olive oil
Method
- 1Rice on.
- 2Fry the beef hard with the garlic until it is properly browned — 6 minutes, and drain nothing away.
- 3Soy sauce in at the end and let it reduce and stick to the meat.
- 4Julienne the carrot raw. Wilt the spinach in a splash of water for 30 seconds and squeeze it out.
- 5Fry an egg with a crisp lacy edge and a runny yolk.
- 6Rice in the bowl, beef and vegetables arranged in their own piles, egg on top, chilli scattered. Mix it all at the table.
