What you need
- ·280g turkey breast mince
- ·100g wholewheat pasta
- ·350g passata
- ·80g onions
- ·10g garlic
- ·1 free range eggs
- ·30g mature cheddar
- ·12g olive oil
Method
- 1Mix the turkey with the egg, half the garlic, salt and plenty of pepper. Roll into balls a bit smaller than a golf ball — wet hands stop it sticking.
- 2Brown them all over in the oil and lift them out. They will not be cooked through yet; that happens in the sauce.
- 3Soften the onion and the rest of the garlic in the same pan.
- 4Passata in, plus a splash of water, then the meatballs back in.
- 5Twenty minutes at a bare simmer, lid off. Turkey is lean and this is what keeps it tender.
- 6Pasta, cheese grated over.
