What you need

Method

  1. 1Mix the turkey with the egg, half the garlic, salt and plenty of pepper. Roll into balls a bit smaller than a golf ball — wet hands stop it sticking.
  2. 2Brown them all over in the oil and lift them out. They will not be cooked through yet; that happens in the sauce.
  3. 3Soften the onion and the rest of the garlic in the same pan.
  4. 4Passata in, plus a splash of water, then the meatballs back in.
  5. 5Twenty minutes at a bare simmer, lid off. Turkey is lean and this is what keeps it tender.
  6. 6Pasta, cheese grated over.
