What you need
- ·350g white potatoes
- ·4 free range eggss
- ·120g curly kale
- ·40g mature cheddar
- ·100g onions
- ·10g garlic
- ·12g olive oil
Method
- 1Potatoes sliced thin and boiled 6 minutes, drained.
- 2Onion, garlic and kale softened in the oil in an ovenproof pan.
- 3Potatoes layered in over them, pressed down flat.
- 4Eggs beaten with the cheddar and plenty of pepper, poured over, and shuffled so it reaches the bottom.
- 5Ten minutes on the hob on low, then under a hot grill for 4 until the top puffs and browns.
