What you need

Method

  1. 1Medallions into a dry hot pan — they are lean enough that added fat just sits there. Three minutes a side until the edges brown.
  2. 2Halved tomatoes cut-side down in the same pan while the bacon rests. Leave them until they collapse.
  3. 3Eggs in the oil at the side of the pan, spooning the hot oil over the whites so the tops set without flipping.
  4. 4Toast, spinach, bacon, tomatoes, egg on top, in that order.

Medallions rather than streaky: same bacon flavour, roughly triple the protein per calorie, and no pan full of fat to pour off.

Worth knowing: Medallions rather than streaky: same bacon flavour, roughly triple the protein per calorie, and no pan full of fat to pour off.
