What you need
- ·4 free range eggss
- ·200g baked beans
- ·50g onions
- ·80g cherry tomatoes
- ·5g red chillies
- ·4g ground spices (cumin, paprika, turmeric)
- ·60g baby spinach
- ·10g olive oil
- ·60g wholemeal bread
Method
- 1Beans warming in a small pan while you work.
- 2Onion, tomato, chilli and spices beaten straight into the eggs — no frying them first, this is a masala omelette not a filled one.
- 3Into a hot oiled pan, spinach scattered over the wet top, then left alone on a medium heat until the edges lift.
- 4Folded once, out, beans alongside, toast underneath.
