What you need

Method

  1. 1Oven to 220C, wedges in with most of the oil and half the spices, 25 minutes.
  2. 2Turkey mince mixed with grated onion and the rest of the spices. Grated, not chopped — the moisture is what stops turkey burgers being dry.
  3. 3Two thick patties with a thumbprint pressed into the middle of each so they cook flat instead of doming.
  4. 4Medium-high heat, 5 minutes a side. Turkey is done at the point it stops being pink and not a minute after.
  5. 5Toasted bread, tomato, patty.
