What you need
- ·280g sweet potatoes
- ·200g black beans
- ·150g frozen edamame
- ·150g chopped tomatoes
- ·1 avocado
- ·60g onions
- ·8g ground spices (cumin, paprika, turmeric)
- ·6g red chillies
- ·6g olive oil
Method
- 1Oven to 210C. Prick the sweet potatoes, rub with oil and salt, straight onto the shelf — no foil, which steams them soft-skinned.
- 2Give them 45 minutes, until the skin is tight and something sugary is leaking out of the ends.
- 3Twenty minutes before they are done: onion and chilli in oil, spices for a minute, then beans, edamame and tomatoes simmered until thick.
- 4Split the potatoes right open and crush the insides with a fork before anything goes on.
- 5Beans in, avocado on, more chilli if you want it.
