What you need
- ·220g turkey breast mince
- ·85g couscous
- ·80g onions
- ·8g ground spices (cumin, paprika, turmeric)
- ·100g greek style yoghurt (0% fat)
- ·120g cherry tomatoes
- ·1 lemons
- ·10g olive oil
Method
- 1Turkey, grated onion and spices worked together with your hands for a full minute. Under-mixed mince falls apart in the pan.
- 2Shaped into eight fingers around the length of your thumb, then fifteen minutes in the fridge if you have it — cold köfte hold their shape.
- 3Hot oiled pan, turned every 2 minutes, about 10 minutes total.
- 4Couscous covered in boiling water to a centimetre above it, plate on top, 5 minutes, forked up.
- 5Yoghurt with lemon, tomatoes chopped rough, everything on one plate.
