What you need
- ·180g cooked king prawns
- ·100g wholewheat pasta
- ·150g cherry tomatoes
- ·12g garlic
- ·6g red chillies
- ·14g olive oil
- ·1 lemons
- ·60g baby spinach
Method
- 1Pasta on. Keep a mug of the water before you drain it — this is the whole sauce.
- 2Garlic and chilli sliced thin into the oil on a LOW heat for 2 minutes. Browned garlic is bitter and you cannot take it back out.
- 3Halved tomatoes in, pressed with a spoon until they collapse, 4 minutes.
- 4Prawns for 90 seconds only. They are already cooked; longer makes them squeak.
- 5Pasta in with a good splash of the water, tossed hard until the sauce goes glossy and clings. Spinach and lemon off the heat.
