What you need

  1. 1Pasta on. Keep a mug of the water before you drain it — this is the whole sauce.
  2. 2Garlic and chilli sliced thin into the oil on a LOW heat for 2 minutes. Browned garlic is bitter and you cannot take it back out.
  3. 3Halved tomatoes in, pressed with a spoon until they collapse, 4 minutes.
  4. 4Prawns for 90 seconds only. They are already cooked; longer makes them squeak.
  5. 5Pasta in with a good splash of the water, tossed hard until the sauce goes glossy and clings. Spinach and lemon off the heat.
