What you need
- ·65g porridge oats
- ·300g oat milk
- ·30g medjool dates
- ·20g peanut butter
- ·20g mixed seeds
- ·80g frozen mixed berries
- ·30g pea protein powder
Method
- 1Oats and oat milk in a jar, stirred properly — dry pockets at the bottom stay dry all night.
- 2Dates chopped small and stirred through now, not in the morning. They need the hours to soften.
- 3Peanut butter dolloped on top rather than mixed in, so you get it in seams rather than everywhere.
- 4Pea protein whisked into the milk BEFORE it meets the oats. Stirred in afterwards it stays as lumps, because there is nothing left to disperse it into.
- 5Frozen berries straight on. They thaw overnight and their juice runs down through it.
- 6Lid on, fridge, at least six hours.
Oat milk on oats sounds like a joke and makes the creamiest version of this in the book — it is starchier than any other plant milk.
