What you need
- ·180g salmon fillets
- ·90g basmati rice
- ·80g frozen edamame
- ·80g cucumber
- ·1 avocado
- ·15g soy sauce
- ·6g root ginger
- ·10g mixed seeds
Method
- 1Rice on. When it is done, fork it through and let it cool to just-warm — hot rice cooks the salmon.
- 2Pan-sear the salmon 3 minutes a side and flake it into big pieces, or use it raw if it is sushi-grade.
- 3Boil the edamame 3 minutes and run under cold water.
- 4Whisk the soy with grated ginger for the dressing.
- 5Build it in sections rather than mixing — rice, then salmon, edamame, cucumber, avocado in their own quarters. Dressing over, seeds last.
