What you need

Method

  1. 1Rice on. When it is done, fork it through and let it cool to just-warm — hot rice cooks the salmon.
  2. 2Pan-sear the salmon 3 minutes a side and flake it into big pieces, or use it raw if it is sushi-grade.
  3. 3Boil the edamame 3 minutes and run under cold water.
  4. 4Whisk the soy with grated ginger for the dressing.
  5. 5Build it in sections rather than mixing — rice, then salmon, edamame, cucumber, avocado in their own quarters. Dressing over, seeds last.
