What you need

Method

  1. 1Garlic sliced thin into cold oil, brought up slowly until it is pale gold — the moment it browns it turns bitter, so take it off early.
  2. 2Half the beans in with their liquid, crushed with a masher into a rough mash. Rough, not smooth: this is not hummus.
  3. 3The other half in whole, so there is texture.
  4. 4Kale in a separate hot dry pan for 3 minutes until the edges char.
  5. 5Mash on the plate, kale over, lemon, chilli, seeds, toast.
