What you need
- ·180g frozen edamame
- ·160g firm tofu
- ·100g baby spinach
- ·120g cucumber
- ·120g cherry tomatoes
- ·1 lemons
- ·12g soy sauce
- ·5g olive oil
Method
- 1Edamame from frozen into boiling water, 3 minutes, then straight into cold so they stay bright and firm.
- 2Tofu pressed and cubed, dry-fried hard until three faces are golden. Skip the pressing and it steams in its own water and stays white.
- 3Soy, lemon and oil shaken together — that is the whole dressing, and it needs no salt because the soy is the salt.
- 4Spinach at the bottom, everything else on top, dressed at the last moment.
