What you need
- ·180g chicken thigh fillets
- ·300g white potatoes
- ·100g mixed peppers
- ·70g onions
- ·10g garlic
- ·8g ground spices (cumin, paprika, turmeric)
- ·12g olive oil
- ·0.5 lemonss
Method
- 1Oven as hot as it goes. Potatoes cut small — 2cm, no bigger, or the chicken is done before they are.
- 2Everything tossed together in the tray with the oil and spices. One layer, not a pile, or it steams.
- 3Roast 25 minutes, then turn it all over and give it another 10-15 until the potato edges are dark.
- 4Lemon squeezed over the hot tray so it lifts the spice off the bottom.
