What you need
- ·180g salmon fillets
- ·300g sweet potatoes
- ·180g broccoli
- ·14g olive oil
- ·1 lemons
- ·8g garlic
Method
- 1Oven to 210C with the tray already in it — vegetables hitting a hot tray sear, a cold one steams them.
- 2Sweet potato in wedges with most of the oil, 20 minutes on their own.
- 3Broccoli and the salmon added, skin side down, 12 minutes more. Salmon needs a quarter of the time the potatoes do, which is why it goes in last.
- 4Garlic and lemon over as it comes out, while everything is hot enough to take it in.
One tray. The salmon is done when it flakes at a fork but still looks slightly translucent in the middle.
