  1. 1Drain, rinse, then dry the chickpeas thoroughly in a tea towel. Rub the loose skins off as you go.
  2. 2Oven to 200C. Oil and salt only at this stage — spices burn over 25 minutes.
  3. 3Edamame in alongside, thawed and dried the same way — it roasts to the same crunch and carries twice the protein.
  4. 4Roast 25 minutes, shaking twice, until they rattle and are hard to the squeeze.
  5. 5Spices tossed through the moment they come out, while the oil still carries them.
