What you need
- ·240g chickpeas
- ·120g frozen edamame
- ·8g ground spices (cumin, paprika, turmeric)
- ·8g olive oil
Method
- 1Drain, rinse, then dry the chickpeas thoroughly in a tea towel. Rub the loose skins off as you go.
- 2Oven to 200C. Oil and salt only at this stage — spices burn over 25 minutes.
- 3Edamame in alongside, thawed and dried the same way — it roasts to the same crunch and carries twice the protein.
- 4Roast 25 minutes, shaking twice, until they rattle and are hard to the squeeze.
- 5Spices tossed through the moment they come out, while the oil still carries them.
